Spelt, a hulled wheat, has less gluten than bread wheat and a rich nutty flavor. It is an excellent source of carbohydrates and dietary fibre.
These White Spelt Mezzi Rigatoni are made with stoneground white spelt so that none of the amazing nutrional and health benefits of this grain are lost in the milling process.
- Bring a saucepan of water to the boil, add a pinch of salt, then tip in the pasta.
- Simmer for about 8 minutes, until tender.
- Drain thoroughly, tip into a bowl then sprinkle a few drops of olive oil over it and toss to coat evenly.
