1 Pumpkin (use the inside flesh of your halloween pumpkin!)
1 Red Pepper
3 tsp Garam Masala
1 Lemongrass Stick
2 Potatoes (Yukon Gold or equivalent)
1 Mushroom Stock Cube (or homemade stock if available)
1 tbsp Rapeseed Oil (or other vegetable oil)
Salt and Pepper

1 hand blender
1 wooden spoon
Add 1 tbsp Rapeseed Oil to a saucepan over medium heat.
Once the oil is hot, add 1 chopped onion, 3 tsp garam masala and some salt and pepper and sweat the onion for 3 min. Stir from time to time with the wooden spoon to make sure the onion is not catching to the bottom of the saucepan.
Add the pumpkin flesh and 1 chopped red pepper to the saucepan and stir to make sure everything is coated in oil and garam masala.
Peel and roughly chop the potatoes and add to the saucepan.
Add the stock cube (or homemade stock), the lemongrass stick and some more salt and pepper to the saucepan.
Cover the vegetables with water, bring the mixture to the boil then simmer for 25-30min on medium heat.
Once cooked, remove and discard the lemongrass stick, then remove the soup mixture from the heat and blitz using a hand blender until smooth.
Scatter over some pumpkin seeds (optional) and serve!
