Orange Polenta Cake

Ingredients
1 orange
120g sugar
3 eggs
100g ground almonds
25g polenta
15g plain flour (or gluten-free alternative)
1 tsp baking powder
All ingredients available from Zéro!
Materials
1 mixing bowl
1 blender
1 saucepan
1 cake tin
Step 1
Place the whole orange in a saucepan and cover with water. Bring to the boil and simmer for 1 hour, until soft.
Leave the skin on, nothing gets wasted here!
Step 2
When the orange feels soft, drain the water (optional: set aside the cooking water to make a syrup) and blend the whole orange with the blender to a smooth purée.
Step 3
Mix the eggs and orange purée together.
Step 4
In a mixing bowl, mix the ground almonds, polenta, flour and baking powder together.
Step 5
Add the eggs and orange mix to the dry ingredients and mix well.
Step 6
Bake at 160˚ C (140˚ C fan oven) for 20-25mins.
When the cake is baked, you will notice that the edges of the cake begin to shrink away from the sides of the tin.
Optional: you can use the orange's cooking water to make a syrup while the cake is baking and pour it on top of the cake just before serving to add a glaze!
