125g butter, chopped
55g brown sugar
80g desiccated coconut
75g self-raising flour
1 tsp ground cinnamon
Preheat the oven to 180˚C
Lightly grease 2 baking trays
In a small saucepan heat the butter, sugar and honey on low, stirring for 2-3 min until combined.
Mix muesli, desiccated coconut, flour and cinnamon together in a large bowl.
Add butter mixture, stirring until combined.
Place tablespoonfuls of the mixture onto the trays, 3cm apart.
Bake for 15-18 mins until golden.
Cool on trays for 3 mins before transferring to a wire rack to cool completely.
Store in an airtight container.
